How does Vacuum Cooling work?

Under vacuum the boiling point of water is lower which causes dispensable water to evaporate. The lower the air pressure is, the lower the boiling point of water becomes. During the vacuum creating process, the water on the surface of the cooled materials evaporates continuously. The evaporation process removes heat of the products fast and efficiently. Moreover, it doesn’t cause any damage to cooled materials and can keep the original sensor and taste. Vacuum cooling can be used to shorten processing time, extend product post harvest life/shelf life and improve product quality and safety.
